Our Story

Why Que17?

Que17 Barbecue carries the name and memory of our son Bryce, who passed away at seventeen. Bryce was built different — he loved good food, real gatherings, and the kind of moments that only happen around a fire with friends and family. This business is built in his honor — not as a memorial, but as a testament to doing things with purpose and doing them right.

Life is about the memories we create and the time we get to spend with the ones we love.

That belief drives everything we do. Most barbecue is built on tradition passed down without question — cook brisket to 203°F, wrap it at the stall, rest it an hour. We respect that tradition. We also took it apart.

We started measuring what nobody was measuring. Smoker humidity. Collagen conversion rates at different temperatures. The relationship between moisture in the cooking environment and moisture in the finished meat. What we found changed how we cook: with the right conditions, you can achieve the same tenderness at lower temperatures, retain more moisture, and produce a more consistent result — every time.

This isn’t barbecue built on guesswork. It’s barbecue built on understanding.

We’re a small operation running pop-ups and catering out of real equipment, cooked over real wood by real people who care about the outcome. No shortcuts. No assembly line. Just deliberate craft, grounded in science, and dedicated to the memory of a kid who deserved the best we had to give.
